Captain Nick's dos dos chili





Half a head of garlic
1 green bell pepper
1 cup diced celery
1  yellow onion
1 small habenaro chile
2#’s ground beef or pork or both
1 can 19oz kidney beans
1 can 19oz canelini beans
2 large cans of progresso diced tomatoes
2oz bittersweet chocolate
2 tsp chile powder
1 tsp cinnamon
½ cup orange juice
3 or 4 bay leaves
Salt to taste


      Brown the beef and pork in a heavy sauce pot. remove the meat and
sweat the garlic, bell pepper, celery, onion, and habenaro chile in the fat
(add a touch of olive oil in necessary) place the beef and pork back in the
pot. add the beans, tomatoes, chocolate, and remaining Ingredients.
simmer for at least 4 hours. serve with a nice shredded aged cheddar and
cuban or corn bread.
